Why Freshly Milled Flour?

Flour is no longer made for health but for the shelf. Industrialized mills use efficient high-speed steel rollers to produce shelf-stable flour in bulk, destroying much of the vitamins and minerals in the process. Ultimately, modern wheat and modern milling methods accommodate an extended supply chain so that your flour can sit in a warehouse, on a shelf, and in your cupboards for an unnaturally long time but at the detriment of our health.

  • For a long time, food felt like the enemy. I’ve battled autoimmune and digestive issues for years, and eventually I was guided down a more natural path that meant cutting out grains altogether. They were contributing to yeast overgrowth in my gut and driving inflammation — and while that choice helped, giving up bread was honestly one of the hardest things I’ve had to do. Bread was comfort. And suddenly it was gone. Finding freshly milled bread made with sprouted grains felt like a small miracle. The sprouting process acts as a natural form of pre-digestion, making the grains easier on my system and helping my body actually absorb the nutrients instead of reacting to them. For the first time in a long time, I could enjoy bread without discomfort or regret. I’m so deeply thankful for this option. It’s allowed me to bring bread back to my table — not as something that works against my body, but something that supports it. Being able to enjoy bread again, while still honoring my health, means more than I can put into words.

  • I am so grateful to have access to freshly milled bread. Over a year ago, my husband had colon cancer surgery and 6 months of chemo. Dietary changes were advised by the oncologist. One of the biggest changes was no white bread; only whole grains. We tried even the most expensive whole grain breads at the grocery store - but most still contain so many preservatives, had a terrible texture and my husband just would not eat them. This bread is so fresh, so soft, and tastes so good! We both feel so much better with the changes we have made. Thank you, Lord, we are truly blessed to have this quality bread that not only tastes amazing but is actually healing.

  • I am so grateful I found Mammie & Nickel. Trying to eat healthy and navigate all the ingredients in today’s food can feel exhausting and overwhelming. Bread was always one area I struggled with—knowing that even many “organic” options still lack real nutrients, quality, and transparency. Now, my kids genuinely look forward to our weekly bread pickup, and they’re always disappointed when we have to settle for something else. They can immediately tell the difference—and even they know this bread is better.
